Derek and I took off last week to see our farm, Serendipity in the Toledo district of Southern Belize. We helped to last trees on the property which is 50 acres. The hard, sweaty work was rewarded with a swim at the Rio Blanco waterfalls afterwards.
We stayed at CottonTree Lodge an Eco Lodge along the Moho River, awakening to a vast assortment of birds in the AM as well as Howler Monkeys. We visited the Maya Mountain Cacao Cooperative fermentation house where fresh harvested beans are fermented and dried, then stored in sacks until there is enough to export a container load. Maya Mountain was the winner of an HCP award last year and demand for the flavorful beans is high.It will be 4 year before we harvest from our own farm here but we did manage to bring home 100 lbs of beans to start making chocolate.
