Construction is coming along on our Santa Fe chocolate factory in the Richards business park. Its so great to see the space we designed have walls and dimension. Our contractor, Mike Scoog from E-Builders has been terrific to work with as has all his subs. This will be the first commercial kitchen that I've owned and had complete control over so its very exciting. The space feels roomy, well ventilated and the work flows from roasting of the cacao and coffee beans to winnowing (husk removal) to grinding to tempering to quality control. There are nice workstations for preparing fillings, a spacious washroom, and a big storage pantry. We are midway now, so scrambling for all the other details it takes to open a business.
Inspired by Chaco Canyon, Cacao Santa Fe has released a Chaco Pottery Shard collection of chocolate truffles with local and wild harvested fruits, berries, nuts, and spices in addition to its bean to bar chocolate.
